I'm not much of a cook. Most of my cooking is more of the survival variety, which I do alright at, my ex-wife's jokes about my culinary ineptitude notwithstanding.
However, there are a few dishes that I prepare and whose recipes I would like to share. The point is that these recipes are so easy to prepare that even I can do it.

Enchiladas Suizas, an enchilada cassarole that was our son's favorite.
Calabacita con Carne de Puerco (Zucchini and Pork), a simple Mexican dish my mother-in-law grew up on in Mexico City.
Backpacker's Pie (AKA Backpacker's Dip), a kind of no-bake cheesecake or dessert dip.
Sour Cream Dutch Apple Pie. I get rave reviews for this one.
Pineapple Upside-Down Cake. My current pot-luck dessert getting rave reviews.
